LENTILS BOLOGNESE WITH ZUCCHINI NOODLES
This lentil bolognese is inspired by the classic dish meat bolognese. You can still enjoy the delicious bolognese flavours while switching to a meat-free, lentil protein source. To round it off, serve with ready-made zucchini noodles, now available in many UK supermarkets.
Makes 3-4 servings
Active Time: 10 minutes or so | Total time: 20 minutes | Level: Extremely easy
- 2 garlic gloves
- 2 onions
- 2 tinned lentils
- 1 can chopped tomatoes
- 2 Tbsp curry powder
- 2 tsp cumin
- himalaya Salt
- cherry tomatoes
- parmesan cheese (optional)
- 400-500 ml vegetable stock
- Olive oil
Step 1: Rinse and drain the lentils. Slice or dice he onions and sauté with garlic.
Step 2: Mix in the drained lentils, chopped tomatoes and vegetable stock and simmer for 10 minutes or so. Adjust the time to taste – I simmer longer as I prefer a thicker consistency.
Step 3: Sautée the zucchini noodles
Step 4:Plate as a pasta meal and top with cherry tomatoes and basil leaves.
