TRANSITION INTO AUTUMN WITH THIS GUT-FRIENDLY WARM AUTUMN SUMMERY SALAD

Well, Despite my best attempts to keep the spirit of summer alive, I can't totally deny the reality that it's starting to get chilly outside and my body is asking for a warm food.
Still, My favourite choice meal will be always a salad so, this week let's combine the two with this great warm Salad recipe.
GUT-FRIENDLY WARM AUTUMN SUMMERY SALAD
Serve: 3 people. Time: 20 minutes Level:Easy
vegetables ( carrot, peppers, anything is in your fridge)
1 cup or handful of Rocket or canon
1-2 Tbsp of Coconut Oil
nuts (optional) great with walnuts
In a frying pan sautè your sliced vegetables with a little coconut oil and sprinkle over the cumin and salt. Cook for 10 minutes.
Arrange the vegetables on a baking tray or oven plate. One at a time, break the eggs into a cup and drop them carefully into the tray. Place it on the grill for a few more minutes until the whites are just set and the yolks are still runny. Season with salt if needed.
Heat about 1 tbsp of coconut oil in a pan over medium-high heat and cook your tempeh until browned.
Serve with a cooked tempeh, rockets and avocado and serve warm.
