SHIITAKE ON TOAST:ANOTHER CLASSIC SPRING TOAST

 


Another classic spring toast from CookYourLife: A homemade shiitake and scramble eggs with mayo, lettuce and sriracha sauce. Yummy!

SHIITAKE SCRAMBLE EGGS 

 

Serve: 1  | Time: 5 minutes |  Level: Easy

 

Ingredients:

  • A slice of GF or sourdough bread

  • Lettuce leaves

  • 2 eggs

  • 2 shiitake mushrooms

  • Coconut oil, for cooking

  • Sriricha

 

METHOD:

To prepare the toast:

  1. Toast your slice of bread, spread on vegan mayo and add the lettuce leaves

  2. Set aside

To prepare the scramble eggs:

  1. Using a fork, firmly beat the eggs.

  2. Place a frying pan on a medium-high flame and add 2 tbsp coconut oil.

  3. Pour the egg mixture into the pan, add the shiitake mushrooms and stir very, very delicately.

  4. Cook for about 20-30 seconds, until golden but not over-dry.

  5. Spread the scrambled egg on the toast

  6. Top with Sriricha sauce as in the photo.
