SHIITAKE ON TOAST:ANOTHER CLASSIC SPRING TOAST
Another classic spring toast from CookYourLife: A homemade shiitake and scramble eggs with mayo, lettuce and sriracha sauce. Yummy!
SHIITAKE SCRAMBLE EGGS
Serve: 1 | Time: 5 minutes | Level: Easy
A slice of GF or sourdough bread
2 shiitake mushrooms
Coconut oil, for cooking
To prepare the toast:
Toast your slice of bread, spread on vegan mayo and add the lettuce leaves
To prepare the scramble eggs:
Using a fork, firmly beat the eggs.
Place a frying pan on a medium-high flame and add 2 tbsp coconut oil.
Pour the egg mixture into the pan, add the shiitake mushrooms and stir very, very delicately.
Cook for about 20-30 seconds, until golden but not over-dry.
Spread the scrambled egg on the toast
Top with Sriricha sauce as in the photo.
