SUMMER ZUCCHINI OMELETTE
I made a summer omelette with the leftover from my order @freshrange.
It’s not the prettiest omelette but the flavours were so good that I thought i’d write this down before I forget.
This one is super simple and you can make with anything really.

ZUCCHINI OMELETTE
(Gluten Free, Vegetarian)

Time: 5 minutes Active | Total Time: 15 minutes | Level: Easy

INGREDIENTS:
1 cup of zucchini, sliced @chi.foods
1/2 frozen green peas @chi.foods
2 small onions, sliced into separated rings @chi.foods
1-2 tbsp of olive oil @essentialtrading
3-4 eggs @foxandwest172
Pinch of salt
Thyme
Water


METHOD

Step 1
In a frying pan sauté zucchini, green peas and onions in olive oil until crisp-tender. Add water if needed.


Step 2
In a bowl, lightly beat the eggs and thyme (only leaves). Seasoned salt and stir in cooked zucchini, onions and peas.


Step 3
Pour egg mixture in a frying pan and cook for few minutes a very low heat, make sure everything is very good distributed.


Step 4
After about 3 minutes run a spatula thought the outer edges of the tortilla to make sure it does nit stick to the pan.


Step 5
After few more minutes place a plate over the pan and flip the tortilla, slide the uncooked part back into the pan, using the spatula to compact the tortilla though the outer.


Step 6
After 4-5 minutes the tortilla should be perfectly cooked, remove from@the heat and serve, enjoy!
