JAPANESE Tofu Scrambled Eggs Open Sandwich


Today I make a delicious yummy tofu scramble eggs open sandwich.

Turmeric is a pungent Asian spice with a fascinating heritage. The fleshy root of the turmeric plant (Curcuma longa) is dried and ground to produce a finely powdered spice with lustrous golden colour. As well as being an essential ingredient in Indian curries, turmeric also plays an important role in traditional Ayurvedic philosophy and healing.

Serve : 1 person | Level: Easy | Active time: 5 minutes| Total : 7 minutes

To make the sandwich:

1 Tofu block

1/2 medium avocado

1/4 tbsp of Whole Root Turmeric Powder

1/2 tbsp of Salt

1 slice of sourdough bread


1. Half an avocado, score inside the skin and scoop out.

2. Slice the whole block of tofu, place into a pan heated with olive oil and crush with a fork until a scrambled egg-like consistency is achieved.

3. Stir in the tumeric and salt. Contine stirring until combined - add a little extra olive oil for a more liquidy consistency.

4. Place the avocado slices on the sourdough bread and top with tofu scrambled eggs.

TOP TIP: For a spicy twist. try with siracha sauce on top
