Jacket Sweet Potato for everyone! A great source of Vitamin B, Vitamin C and omega 3 thanks to the avocado and salmon. Full belly, happy belly!

JACKET SWEET POTATO

BEST JACKET SWEET POTATO WITH SMOKED SALMON & AVOCADO

Ingredients:

2 medium sweet potatoes

150 gr smoked salmon

1/2 avocado

lime juice

olive oil

salt

freshly ground pepper

Recipe:

  1. Pre-heat the oven to 200ºC.

  2. Pop both sweet potatoes in the oven for 10 -20 minutes on a medium-high setting.

  3. Meanwhile, tear up the smoked salmon into small strips. Half the avocado, dice and scoop out. Set both aside.

  4. Once the sweet potatoes are cooked and the skins are crisp, remove from the oven and cut in half. Then sprinkle half the cut avocado into each and top with smoked salmon. Drizzle with a few drops of lime juice, olive, salt and pepper and enjoy.

Mel’s Note: Sweet potato are slightly sweet to the taste - hence the name! - so be generous with the black pepper and lime.
