HOW TO COOK GLUTEN FREE GARLIC PASTA IN THE ITALIAN WAY

 

Everyone knows how to cook pasta, right? or at least I thought so! Turns out it’s no so easy! An Italian friend is staying at the moment and he’s been teaching me how to really cook a delicious plate of pasta…

GARLIC PASTA

Serve: 2 people | Active Time: 10 minutes | Total Time: 20 minutes | Level: Easy

INGREDIENTS:

Gluten Free spaghetti

3 - 6 cloves garlic, crushed

Extra-virgin olive oil

Red chilli pepper

Basil

Freshly grated Gran Padano, optional

METHOD:

  1. Throw a generous pinch of salt into large pot of cold water and bring to a boil over a high heat. Add the pasta and cook, following the packet instructions.

  2. While the pasta cooks, fry the garlic and one whole red chilli pepper in olive oil in a large skillet over a low heat, stirring occasionally, until the garlic softens and turns golden brown.

  3. Drain the pasta - keeping back about a 3 tablespoons of the cooking water - then set the pasta aside. Add the pasta and the reserved water to the garlic mixture. Mix well.

  4. Transfer to a large serving bowl and add the basil. Serve topped with grated cheese, if desired.
